This is what I threw together the other night and it turned out FABULOUS! I couldn't wait to eat the leftovers last night!
I didn't chronicle the pork part, I didn't think of it at the time - but I had some pork cutlets I bought on sale. I rubbed them with a mix of cumin, chili powder, salt, pepper, a dash of honey and the juice of a lime. Then I broiled them.
Then I took veggies:
yellow squash and zucchni, chopped them up.
an onion and a small 'bunch' of broccoli - chopped them up:
marinated in:
olive oil, balsamic vinegar, salt, pepper, touch of sugar -
Stirred it all up:
marinated for 10 minutes then put on a sheet covered with tin foil and broiled:
til they were all crispy (stirred once during)
then served on tortilla with the pork sliced thin:
we used a tiny bit of sour cream on them - rolled them up - and YUM!!
They were so good and so good for you!
