This turned out so good! 1 cup coffee, 1/2 red wine, 1/4 cup balsamic vinegar, 2T homemade onion soup mix, 1T minced garlic. (I'll probably adjust the vinegar wine ratio a bit. It was tangier than I prefer, still amazing though.
Put all in IP with chuck roast. Set for 120 minutes. NPR. Just picking it up out of the liquid will shred it.
