Re: February Dinners
I did the red curry cauliflower lentil soup for lunch and it was just ok, but made me want curry, so going to put curry on the menu for next week. I use that same recipe I got from here and is easy quick and delicious. I think I do add more spice but other than that...
Last night was impromptu burgers and salad. I had exactly enough gr beef leftover for 4 burgers and 2 veggies in the freezer. We didnt have any buns but I have leftover sub preztel buns that we cut in half and I wrapped mine in lettuce. I made salads for the side.
Lunch today: fish and roasted veggies
Dinner: chili - beef and vegan
This week in interchangable order:
pot pies (chicken and going to try fake chicken for my veggie one,normally I do mushroom but wasn't feeling it this week)
stir fry
corn dogs and onion rings (trying fake corn dogs for dd and neither dh or I will eat this, we will have leftovers instead) but I like to work out after work and then kids are so busy are schedules dont always line up for dinner.
Ill probably have a leftover night and/or a sandwich night. I also have make your own pizza ingredients available.
Is this a weeks worth of meals? It better be because Im tired!
