Tomato-Free, Soy-Free Pulled Pork
I stumbled across this recipe when I was doing an elimination diet to try to find out what was making one of my kids wheeze. It wasn't tomatoes or soy, but people liked this recipe so much that I still make it. It requires very little work, always a plus!
Take 1 pork shoulder roast, up to 7 pounds, or the equivalent in smaller cuts off the shoulder. Just put the meat into your slow cooker on Low while fixing breakfast and leave it there until sometime in the afternoon. The roast will give off a pint or more of delicious juice. Ladle this into a bowl, chill, lift off the fat, and freeze the broth for a later use. Meanwhile, melt a stick of butter (no substitutions) in a small saucepan. Stir in 2 cups brown sugar, 1/2 cup honey, 1/4 cup Dijon or brown mustard, 3 chopped garlic cloves, and 1/2 tablespoon salt. Turn the meat over, paint it with this sauce, and leave for an hour or two. I like to make a carbo-loader-comfort-food meal out of this with soft buns or white rice, some corn or tomatoes on the side, and a bowl of homemade coleslaw.
