We had Moroccan chicken with hummus, rice and Lebanese salata last night. The salata is made out of tomatoes, peppers, and cucumbers. DH has not been eating tomatoes, so I separated those out. He was so thrilled

Tonight, I'm attempting to modify my Pork Carnitas recipe to be made with chicken thighs because that's what I had. Time will tell!
