Basically, something is vegan if it doesn't have any animal products in it. It can get a rather tricky at times, though, because although you can usually tell pretty easily if something has things like eggs and dairy in it, sometimes it's not so obvious that something has an animal product in it. For instance, not all sugar is vegan, because some white cane sugar is filtered through bone char, which is made from the bones of cows. Some vegans will still eat that type of sugar sometimes, though; I'm not sure if your dh's co-worker would mind that type of sugar? I personally like to avoid that type of sugar in my own cooking, but if someone were to make me a dessert using it, I would eat it.
