I tried some recently that were a couple years old and they tasted stale so I had to throw them away.

Yes--check the date and then taste/smell to see if they're stale or rancid. I've had some that were pretty much uneatable before (left in the cupboard at my IL's for years past the date).

Like any whole grain, oats will get rancid & taste nasty with age.
