December Dinners
Tonight I had no plan and threw something together that everyone loved. I had pasta, miso ginger broth (from Trader Joe's), cabbage, onions, garlic, and Aidell's pineapple teriyaki meatballs (from Costco). I cooked the meatballs and the pasta in the miso ginger broth (just enough so the pasta would absorb most of it), sauteed the vegetables, and tossed it all together.

Last night was French onion soup in the IP and grilled cheese. Tonight will be chicken and basalmalized onions. |

My version of a Greek bowl: Greek meatballs, yellow dill rice, Greek marinated salad (cuke, olive, red onion, chickpeas, artichokes, feta in a lemon vinaigrette), dill yogurt sauce, crumbled feta.

I love Greek food. Lemon, oregano, dill, feta are some of my most favorite flavors. I still need to perfect my dill yellow rice. I'm not sure why I can't get the texture right although the flavor was better this time. I wonder if I need to bloom the turmeric - maybe it needs to cook a little first so it doesn't give a chalky-like texture. :think

I forgot to post anything from last week. :dohThis week we have one person having their wisdom teeth out so menus are going to be soft the second half of the week!
Monday - our annual Christmas dinner out Tuesday - Creole pork chops, rice, asparagus Wednesday - Crockpot chicken in bone broth (hopefully falling apart), baked potato, zucchini Thursday - pancakes, eggs, sausage, cheesy hashbrowns Friday - lemon pepper tilapia, broccoli cheddar rice, beets Saturday - ham and potato soup (I made up a version two weeks ago that was incredibly yummy - I can share the recipe if anyone wants it) Sunday - roast and carrots, mashed potatoes, green beans, gf gravy, layered salad with parmesan peppercorn ranch |

Well, tonight I'm not sure as my daughter's making something later and hasn't told me yet. Tomorrow night I'm still not cooking, tomorrow is my son's wedding so it'll be wedding food for dinner!! I'm super excited (And I've also been baking all weekend to help get food together for it)

Tonight is Mahi-mahi with Thai Coconut Curry Sauce with the Coconut Rice from this recipe, and Prosciutto Wrapped Asparagus. I also made this Mocha Chocolate Icebox Cake because DD's boyfriend and youth leader are coming over for dinner.

Last night I made Beef, Tomato and Acini di Pepe Soup, tonight is leftovers. I ate SOOO terribly the last couple of weeks and am actually looking forward to regular cooking again!
