It's finally autumn here in Australia :rockon and so the days are beginning to cool down, especially in the morning and at night. Tonight we are having a slow cooker chicken dinner with rice :D |

I made this one pot chicken stew and used bone in chicken thighs with skin and pulled meat off the bones after I added potatoes. DD LOVES soup and DH also loves this dish. I will definitely make again as it was easy and cheap and very tasty.

DH doesn’t like rice in soup sadly (I also made a double batch of this and am taking one to our pastor and his family, his wife just had baby #5. I am taking it with a salad of mixed greens, sliced almonds, sliced apples, and raspberry vinaigrette, along with 2 loves of French bread from Costco. Also, fruit salsa with cinnamon chips which is a tradition in my family, started by my sister and I, when someone has a baby— 2 golden delicious apples, peeled and chopped, 4 kiwis chopped, package strawberries diced, package of raspberries, 2 tablespoons strawberry jam, 2 Tablespoons each white and brown sugar, less depending on your taste. It is divine) |

Roast beef, potatoes, carrots, green beans all in the crockpot. I'll make gluten free gravy to go with it.

It was mid-80's today! We've got another nice day tomorrow before we go back to seasonable 60's, SO I did Indian Butter Chicken in the crock pot tonight. The kids asked for Muffalettas tomorrow and since that doesn't require turning on the oven (and I have olive tapenade) I think it's a good choice.

I make it in the food processor - takes about 2 minutes! The kids eat it by the spoonful.

zucchini pizzas (lengthwise slice of zucchini, roasted then topped with sauce and cheese and toppings), honey glazed roasted carrots and cheesy rice.
