Vegetarian BBQ
What are some vegetarian foods I can put on the BBQ?
There are no veggie dogs in the stores right now, so they are out. What about kabob's? Is there a trick to bbq'ing them good? Any other suggestions? |
Re: Vegetarian BBQ
If you don't mind foil you can make veggie packets or wrap up potatoes. We like to put in zucchini, peppers, onion, whole garlic cloves, cherry tomatoes, cooked potatoes. Top with a few pats of Earth Balance, wrap and cook till done. Make sure you can unwrap them easily to check them. You could add beans to this, too. We serve this with Sour Supreme and salsa. You can put it on potatoes, cornbread or in corn tortillas.
Soak corn in water for an hour and pull off any silk. Put on the grill and turn when each side gets grill marks. Should be done when the grill marks show and the husks are dry. Rub in Earth balance and sprinkle with Spike! I freeze my tofu for kabobs and I've only made them at my moms. She has one of those racks with the skewers. marinate the tofu in teriyaki or your favorite marinade, but only for 20 minutes max. Then put cubes of tofu on skewers with peppers, zuchinni and fresh pineapple. If you want you can put on whole cooked red potatoes and or onion chunks. Turn and cook kabobs till zuchinni is cooked. |
Re: Vegetarian BBQ
Excuse the language in the name of the recipe, but these kabobs are amazing. The last time that I made them, the meat eaters forfeited their meat for them :giggle
I omitted the tofu and the artichoke hearts because I didn't have any, and they were still amazing. |
Re: Vegetarian BBQ
If you like Tempeh, it grills well.
There are lots of good tempeh kabob recipes out there. |
