We had a modification of this Pressure Cooker's Chicken Pot Pie recipe.
https://thisoldgal.com/pressure-cooker-chicken-pot-pie/ We're gluten free and dh and I don't eat white potatoes, so I did the recipe, minus the potatoes and the biscuits and used fresh vegetables instead of the frozen veggies. I also did the homemade "creamy soup" portion of it (I hate canned soup). I served over mashed potatoes for the kids and over zucchini noodles for the adults. The kids RAVED. Dh RAVED. They loved it. :heart So it will be a remake. :yes |

Italian drip beef tonight. Out of the freezer, but it's quick and easy: chuck roast, half a jar of pepperoncini, a couple of heaping tablespoons of Italian seasoning and some salt (I can look up the exact amounts if anyone needs them). Crockpot all day until it shreds, then serve open-faced on ciabatta rolls with provolone - stick them under the broiler to get the cheese nice and browned. This is ALWAYS a crowd pleaser; my kids even like to eat them cold in their school lunches. I need to get a couple of roasts and do a big batch to freezer for post-baby meals.
We'll do sweet potato fries with it, and maybe salads. |

I'm making a meal for a friend tonight. The chicken recipe calls for split chicken breasts (bone in) cut in half, 5 minutes on each side in skillet then 450 for 18 min. I'm using boneless thighs though. What do you think about the oven temp and time in the oven? I'm thinking of lowering it to 425. :think I probably shouldn't do something not tried and true, but they have a lot of food allergies.
For my family, I'll put chicken thighs in crockpot with 1/4 c honey 1/4 c mustard 1/4 c orange juice 2T soy sauce Same sides for both, roasted veggies and potatoes. |

I don't think I'd lessen the temp, but probably lessen the time. I have found that the key to oven roasted tender chicken is high temps for short times. Thighs would be smaller thus the shorter time. Thighs are also far more forgiving in that they wont' dry out as easily.

Thanks, 2sunshines, they came out well I think (I hope!). I did 15 minutes. They had already cooked quite a bit in the skillet.
My crock pot chicken (above) was very good, although I might add 1/2 t salt next time. Changed my mind on sides and put this over rice with honey-butter carrots and cauliflower. |

Tonight's dinner was chicken teriyaki over rice with spinach salads on the side.
Tomorrow I have some beef smoked sausage that I'm debating what I'll make with. :think I may do a classic beef/veggie/rice skillet or I may do sausage quesadillas. :think Or something entirely different. :think |

We're having Pappardelle with Pancetta, Broccoli Rabe, and Pine Nuts, rosemary bread, Roasted Broccoli with Lemon and Parmesan and chocolate cake.

My oldest turns SIXTEEN!!!!! :jawdrop :jawdrop :jawdrop on Monday and since he has a basketball game that day and will be gone most of the day we are doing the family celebration today. Grandparents come over for dinner and I cook the meal of the birthday child's choice. :heart
Tonight's menu is: Appetizer: guacamole and chips Dinner: BBQ ribs, mashed potatoes and gravy, baked beans steamed carrots and salad. For dessert I made a brownie bottom ice cream cake. :heart |

Wow, I've missed almost a whole week here. :doh
Monday - I made up a gf pizza style mac n cheese on the fly with fridge and pantry items - it ended up being more of a soup, but it was good. Tuesday - GF pasta with homemade Italian turkey sausage, broccoli, spinach, bacon, and parmesan in a pasta water, garlic, salt, red pepper flake sauce. Wednesday - Salmon baked in foil, rice, parmesan yellow squash, arugula with balsamic vinaigrette Thursday - Tacos, Mexican rice, homemade pica de gallo and guacamole Tonight - eggplant rollatini (I'm adding turkey), olive garden type tossed salad with Italian vinaigrette Saturday - vegetable beef soup with leftovers for Sunday |

Ack! Thanks for the bump of this thread!
We had tacos yesterday so today I'm using the leftover meat to bake some nachos. Sides are easy -- raw veggies and dip and fresh fruit. :heart |
