Vegan Cocoa Kale Cupcakes (allergy friendly!)
This book caught my eye at the library,

My 10 yr old caught me making the cupcakes and she was horrified, but after bravely trying one, she's a fan. I made them gluten free and we all like the way they turned out. 1 1/2 c all purpose flour 1/4 c cocoa 1 c sugar 1/2 t salt 1 t baking soda 1 T white vinegar 1/3 c melted coconut oil 1 t vanilla 1 c water (or cool coffee) 1/4 c puréed cooked kale Whisk dry ingredients and stir together with combined wet ingredients. Fill each muffin tin 3/4 full. Bake 15-18 minutes at 350 or until toothpick comes out clean. Allow to cool in pan for 5-10 minutes before removing. My mini food processor didn't exactly purée the kale, it was more of a grind. But that worked. |

Oh, this sounds great! I really want to try this. :tu I love trying recipes with things in them that would make you think they might taste yucky and they end up tasting yummy! lol
