Canning with Vita-Mix
 
I heard something about the Vita-Mix and canning. Does it simplfy the process? I would really like to preserve a bunch of things this summer by canning, freezing and dehydrating if possible, but I don't have clue 1 about canning. Can anyone help me?

hmmm.... :think I can't imagine what you'd use a blender (albeit a fancy one for) while canning. When canning you normally cook the food (or blanch it) and then put it in the jars and boil the jars for a certain amount of time and voila you're done. :rockon It's super easy peasy it just sounds hard! :yes

How hot do you need to cook food in order to blanch it? From what I have seen on YouTube and in the recipe book you can heat such things as soup up to boiling in this blender because of the horsepower and friction I guess. Haven't tried it yet. So I am thinking if one made applesauce to can or marinara sauce or something, you must be able to heat it up while blending and them pour it into jars or something.

But bak to what you were saying: so if I have something I want to can like say green beans, I blanch them (If I recall that is a very short time in boiling water - pardon my ignorance), then pour them into a Ball jar or something similar and place the jar in water, heat it to boiling and doesn't it like vacuum suck the lid on as it gets hotter and hotter? And also do I out filtered water in with the beans or do I use the water they were blanched in or no water? Thank you so much for your help!

You've got the basics. So for things without an adequate acid content you have to pressure can them with a pressure cooker. So veggies normally have to be pressure canned and fruits can normally be canned in a boiling water bath.

I just wanted to reiterate what SWS said. You want to make sure you learn about how to properly can before doing things like veggies or meat. You don't want mold that causes botulism--it's deadly. I didn't read the link, but I just wanted to stress the importance of educating yourself a little on safety before you do it. I'm hoping this doesn't completely scare you away. I learned by doing it with a friend who had canned before, and she walked me through the steps. Do you have anyone knowledgeable who could help you?

I'm also curious about the vita-mix and canning. If it helps do canning, that might just bump it to the top of my list of things to save up for.

I think as far as the Vita-Mix goes with canning that they have information on their website: vitamix.com

And I do have a couple of people that can help me walk through the canning steps. I will probably mostly dehydrate and freeze stuff because canning has always freaked me out, but I will do it with someone and see what I think after that. I probably would never can meat, but veggies would be nice.
