I made salsa verde chicken with rice last night. sliced cucumber and peas for green things on the side. (not together)

Tonight, I am making the caprese chicken and orzo that someone posted last month, and spinach on the side.

Monday, I made taco soup in the instant pot. For some reason, it did not seal (OK, I know the reason....I forgot to put the ring on. :doh ....still dealing with covid brain fog. ) All the liquid evaporated. It was like chili. Everyone loved it and said to make chili like that again, that it was way better than my usual chili. :giggle

I made French bread pizzas last night and whipped up some chicken with a creamy sauce (tomatoes, spinach with an Alfredo based sauce but I added cream cheese and the chicken cooking liquid) to have some extra protein with it.

I also made Lima beans for me to eat with the chicken (I'm not eating pizza right now) and they were SO GOOD. I cooked them in water and drained and then added butter, salt, pepper, and cream.

Last night I grilled lemon rosemary chicken and zucchini and made smashed potatoes with homemade ranch.

Tonight I'm planning on cheese enchiladas and mexican rice, but might do salad on the side instead.

Tonight I'm making mahi mahi over coconut rice with a mango avocado salsa. Salad on the side.

I did a Crock-Pot roast with red potatoes, carrots, and mushrooms. I used a new recipe and the acid it called for was balsamic vinegar. I will not do that again. It wasn't bad but apple cider is much better.

I think tonight we'll have Lebanese Stuffed Squash in a tomato sauce to take advantage of the small zucchini and yellow squash and the tomatoes in the garden.

I'm trying a new recipe tonight and I copied the recipe without the title so I have no idea what it's called! :doh It's a polenta pizza pie thing. I'll serve it with spinach salad.
