The Barbecue Thread
 
I just *adore* veggies on the bbq. Seriously adore them

Do any other vegetarians use the bbq? What do you like to grill? Favorite recipes? Since it's that outdoor eating season, let's share ideas! :popcorn

I love BBQ'd vegies too! Favourites are zucchini (do you call them courgettes there?) and potatoes. With the potatoes, par-cook them (steam is best), then toss in a bit of olive oil and scrunched/ripped up herbs - rosemary is my favourite - let them sit (covered) for an hour if you have time, then BBQ briefly just to give them that chargrilled flavour (and finish cooking them through of course).

I love zucchini and peppers, cut into chunks and tossed with a bit of olive oil and balsamic vinegar. I have a bbq wok, which is great for those and roasting potatoes too. :yes

BBQ corn on the cob is always tasty, too. Take off the outer husks and silk and grill away! Shishkebobs would be an easy to make vegetarian, too. :yum

My mom makes fajitas on the grill. She marinates all the veggies and cooks them in a grill basket. Really delicious.

If you make kabobs and put barbecue sauce on them they taste so good.

I think there was a bbq episode on Compassionate Cooks.

Grilled portabello mushrooms :yes

I have this one recipe that is big "steaks" of eggplant, marinated it a bunch of yummy stuff, made into "sandwiches" with goat cheese in the middle and a tooth pick stuck through to hold it together and then grilled. Sooo good.

Katie would you mind sharing on the recipe board. I could make a grilling sticky if needed over there. I'm pretty sure this has come up before. Perhaps a grilling/camping food sticky?

We love to grill! We do a lot of kabobs, corn, and the veggies mentioned above. We also LOVE grilled pineapple. We also grill veggie burgers. Ooh, and asparagus is good too!

Now I'm hungry.

cut golden apples in halves and place them cut side down. brush with honey and rum... just cannot be any better: the bottom will caramelize and inside is all soft and mushy :heart
also, we wrap cooked quinoa or orzo/cus-cus into a large collar green leaf (for the lack of banana leaf :giggle) with some veg and whatever sauce and let that steam on there... so good. makes a side for whatever you are eating.
all of this is making me very hungry.

I've done shroom, red pepper and tofu kebabs before, can't remember the marinade though....

Of course I read this thing in January. I could cry for the lack of grilled eggplant.

My DH made these kabobs to die for... red onion, portabello, eggplant (if you've never grilled eggplant, you must!), garlic and red bell pepper. Marinated them a little in a red wine/teriyaki sauce and they were possibly the best thing I have ever had. Just remember to soak your wooden skewers well before putting them over flame. :shifty

When I get muttered at tongiht for making DH fire up the grill, it is all your fault. Yours, d'you hear?! :P~

I did artichokes on our little flat top griddle. So yummy. I cut them in half, cleaned out the icky hairy stuff by the heart and then steamed them until they were 3/4 the way cooked. Then placed them cut side down on the griddle.

I can't wait until it is warm enough that I can talk DH into lighting up the grill.

love protobella mushrooms, all types of veggies from corn to zucchinie and eggplant. MMMMM I getting hungry. Oh we love the black bean burgers too. I have never done fruit but will have to try it.

Oh and lily I just found out I looooove artichokes.

When I was growing up(in omni family) we loved to bake potatoes and onions wrapped in aluminum foil. They come out sooooo yummy but works mostly only with charcoal grills of course those are cheaper for one that would be using it for only veggies. Id imagine sweet potato comes out just as well.

Of course there is always the occasional soy burgers etc that could be grilled on it too?? :yes

I love grilling.

I found a grill wok, and it is wonderful.. it is squarish with holes on the bottom and sides, non stick.. washes up wonderfully.
Last time i used it i cut up fresh asparagus, zucchini, mushrooms, small carrots in slices. I used a simple vinegar marinade with some garlic and onion seasoning.
On the Kabobs, i put the large mushrooms, used small cherry/grape tomatoes and large chunks of onion & peppers.
the marinade i used is very tasty-

Soy Ginger Marinade - great for kabobs on the grill.
1/4 c of honey
1/4 c of olive oil
1/4 c of soy sauce (braggs )
1/4 c of lemon juice

1 tsp of grated fresh ginger
1 clove of garlic, minced
1/2 tsp oregano
1/2 tsp rosemary - optional

combine the ingredients. Marinade veggies for kabobs. I marinaded them for about 45 min. as i was preparing corn to grill and the other veggies
for the wok. I did not have the ginger - so i skipped it, & i love it that way too. my hubby is not fond of the rosemary, so sometimes i skip that too..

Grilling in the wok is great for smaller veggies as they steam, and get nice and tender too. no need for huge chunks.. yummy.
