Made a wonderful vegetarian quiche for dinner - who wants the recipe?
We're not vegetarian but prefer to eat meatless dishes at least once a week for health reasons. I came across this recipe yesterday, made it for dinner and it was WONDERFUL:
A few handfuls of spinach (recipe calls for 5-6 oz), chopped 2 leeks, chopped 3/4 cup butternut squash, cut into thin wedges (about 1/4 inch) 12 oz mushrooms, chopped 1/2 red pepper, chopped 10 fresh basil leaves 3 tablespoons soy sauce 1 tablespoon olive oil salt and pepper 4 oz coconut milk 4 eggs feta cheese Place the vegetables, oil and soy sauce in a big saucepan on the stove and cover with a lid. Steam for roughly 6 minutes until the veggies are nearly cooked, stirring regularly. The spinach will wilt and the butternut squash will get softer. Add salt and pepper. Spoon into an ovenproof quiche dish. Mix the coconut milk and eggs (I actually used 6 oz milk and 6 eggs, because my veggie mix looked like it needed more) and pour over the vegetables. Crumble feta cheese over the top. Bake at 350 degrees for about 20 minutes or until set. |

I would love to try this but does Feta contain a lot of lactose? I have to stay away from lactose as much as I can. Maybe it would not be enough to upset my stomach? I miss quiche so much!

leeks are so big, 2 seems like a lot with all the other veg? Am I thinking of something else? (although I cook a ton leeks scare me and I've never used them)

I actually often use more than 2 leeks on this recipe - so maybe you are thinking of something else, I'm not sure. You can substitute onions but then I would fry them gently in some olive oil before putting all the veggies together, so you don't end up with that raw onion taste in your quiche.

Thanks for the reply! Do you use the entire leek? I'm making some food to bring over to a friend whe just had a baby and this seems good b/c it's filled with veg and protein. I typically cook vegan foods, but she's a meat eater so I think she'd enjoy this. Thanks mama!
Funny! I just took a peek at your blog and see you are in Johannesburg. One of our church friends were there as missionaries for TWR and left only 2 or so years ago. How long have you been there? |

When I use leeks I use mostly the white and light green, although sometimes I go higher if I need more. They cook down a lot. Save the dark tops for stock.

I've lived in South Africa all my life, but in Johannesburg for the last almost-3 years. I love it!

I remembered this recipe & I just saved it to my flash drive. (I willhave to sub for the cocnut because I am allergic. Any ideas for another milk? Soy works for me, not sure how it would be here...))

I have made it with cow's milk and coconut, so probably other milk substitutes would work as welll.
