This was easy enough. It is good too! I sauteed some onions in a pan with olive oil until soft, then I crumbled some firm organic tofu into the pan. Next I added some cumin, and tumeric. Then I added chili powder, and 1/2 tsp of garlic paste. After it was well mixed I rolled it up in a tortilla and added some cheese and salsa. It taste just like a real egg breakfast burrito (but with the stomach ache that comes along with the eggs). :P~

:yum I make something similar, it's so good.

Another fun and easy way to make "eggs" is to slice tofu, fry it in Earth Balance, then put it on an english muffin (or bagel or roll of toast) with nutritional yeast, and vegan sausage or bacon (and vegan cheese if you want).

...and no stomach ache! I think I can trick my DH with this one. I added some cilantro in there so it had a nice zing.

I add salsa while it's frying. If I'm feeling really adventurous I do black beans and home fries and they all go in that burrito.

I do potatoes and beans with my tofu, too. Delicious.
