Who has Eggplant recipes?
We're going to try eggplant. So how do you cook/season it? And what goes well with it?

Vegetarian, rather than vegan, but this recipe is SOO good. I have a few stashed in my freezer, and one of them is coming out soon! ;)

Romanians eat an eggplant salad that is really good and we've made it with veganese too. I can try and explain it to you (it is pretty simple) or try and google a recipe online to link to you.

That recipe actually appeals to me more, so that is the one I will try with eggplant. I was thinking of maybe putting it on bruchetta type bread. :think Anyway I'll let you know how it turns out! I won't be buying any until the 5th though, but I'll revive this thread then. :)

Have you tried baba ghanooj? I'm not sure whether to post the recipe or not since it contains yogurt.

We discovered that we really liked it this way:
Cube eggplant, quarter a few tomatoes, and peppers. Drizzle olive oil and season with salt, pepper, basil, garlic, etc. Roast in the oven for about 35-45 minutes. Let cool and then put it all in the food processor and whirl it. Heat through in a pot and adjust seasonings. It makes an amazingly good pasta sauce, thick and consistent! Top your warm pasta with this and cheese if you like. We also really liked it sauteed with soy sauce, garlic, ginger, and chili sauce over steamed rice. It needs to cook down a while to get it to the right consistency. About 30 minutes or so... This also freezes well and can be easily reheated in a skillet. |
