Recipe says to use a heavy duty mixer, but I don't have one
 
The last two times I've tried to make bread with my breadmaker, it hasn't worked at all. I wanted to try making it by hand instead of with the machine, but the recipe says you're supposed to use a heavy duty stand mixer if you're not using a bread machine, and I don't have one. Is there any way to do it without one?

I do it all the time, and pasta :shrug you just need strong muscles and tireless hands :giggle Here's a nice article about kneading.

I have weak muscles and tired hands and I manage to knead bread. :yes

I've never had a stand mixer (or anything other than one of those cool hand-powered egg beaters), but I used to make bread all the time!

I looked in all my cookbooks until I found a recipe that didn't assume that I had all the fancy gadgets and we happened to have a lovely book called The Tassajara Bread Book that has amazing bread recipes and assumes you don't have a mixer :rockon

It even has specific directions for hand mixing - "beat with spoon (100 strokes)" :)

I find for recipes that are not gluten free, if you kneaded it enough, it's ok. IF it is gluten free -- follow the directions explicitly - and do not even attempt it if it is raining outside. :shrug3

Ugh--it IS gluten free!!! And overcast--with my luck it'll rain, too. :giggle

:doh My bread is not gluten free and I live in Sunny California. :doh
