June Dinners. What are you cooking?
I tried a several new recipes that have become favorites.
Healthy chicken schwarama bowls (not very authentic but still delicious) from Recipe Runner. https://reciperunner.com/healthy-chi...hawarma-bowls/ Thai grilled chicken (gai yang) from Recipe Tin Eats. I also made her coconut rice and Asian salad dressing. I love her site and will be making lots of her recipes. https://www.recipetineats.com/thai-g...cken-gai-yang/. This recipe is definitely worth the extra ingredients if you love Thai food. :yum As far as Asian recipes go, I didn't have to buy too many extra things. |

I made a crockpot Creole kielbasa and chicken dish over rice for dinner. It was just okay...not bad but not amazing either. At least it was healthy.:shrug3

We had a sheet pan dinner with sausage, sauerkraut, roasted baby potatoes, beets, and a kale caesar salad.

I made black bean and brown rice enchiladas on whole wheat tortillas and it was awesome! I dumped a jar of corn and black bean salsa in the filling and it was the best shortcut ever. Stick em in the oven for 20 min on 350,top with Mexican cheddar and some more salsa. Yum.

Rainy day so my joints are done in and lots of the kids have summer colds, so I am making chili... Lamb and lentil for the fam and Quorn and lentil for the veggie kid. :shrug3 lazy I suppose but the spices should get the sick ones' sinuses opened up.

Carne Guisada(Mexican beef stew). I use this recipe. It is so easy and everyone in my family likes it.

My mother in law also puts potatoes in hers. Today I'm adding mushrooms because I have some n hand that need to be eaten. |

Surf and turf. Someone at work gave me a filet mignon but it's small so I'm making shrimp, and small piece of salmon, and asparagus all on the grill. Or I should say DH is making it on the grill :lol.

I made barbacoa beef with a tri-tip in the crockpot and we used it to make tacos and also had a mexican salad. It was yummy and everyone was happy so I'm going to try and remember to make it more this summer since it won't heat up the house. It was 98 degrees here today!

I pulled a few recipes together and made a sort of casserole. I mixed mayonnaise with rice and put into a baking dish with some leftover cooked vegetables and some white wine and water. I put a couple of chicken breasts on top of it with some salt and parsley and then dumped a bunch of parmesan cheese on top of it. I baked it until it looked done and it turned out reasonably well. Jacob and James liked it, Ivy choked it down with minimal complaining and I thought it was decent.

My gluten free version of buffalo chicken salad -seasoned almond flour and gf panko coated chicken tenders dipped in homemade buffalo sauce (equal parts of butter and hot sauce heated); romaine and iceberg lettuce; homemade pico de gallo (tomatoes, red onion, jalapeno, cilantro, salt, red wine vinegar); cheddar cheese; bacon; blue cheese crumbles; crunchy tortilla chips; homemade ranch (mayo, milk, lemon juice, granulated garlic, granulated onion, salt, pepper, parsley, and paprika).

I've been on an Instant Pot kick lately. I'm having a hard time calling it cooking when all I do is dump things in the IP, set it and walk away.
Yesterday the oldest asked for Buffalo Cheesy Chicken (chicken breasts, cream cheese, Frank's hot sauce, onions, garlic, parsley, butter, oregano). I shred the chicken and mix everything together after it's cooked and let it sit Keep Warm until we're ready to eat. Steamed broccoli, cucumber salad, and oven-fried corn tortillas on the side rounded things out last night. Tonight we're having IP Beef and Bean Chili and cornbread. (I put chipotle powder and corn kernels in the cornbread for dh and bake it in mini tube pans so it gets lots of crusty edges that the kids like.) Tomorrow night is Muffaletta night. It isn't really authentic Central Grocery, but what my kids will eat - my faux olive tapenade and their favorite cold cuts. |

Went easy for dinner tonight. Roasted veggies (carrots, broccoli and onion) with sauteed chopped chicken breat in a coconut curry sauce.

Pork tenderloin, baby potatoes, peas and carrots. My dh requested eggs, bacon, and pancakes for dinner tomorrow night. :lol I'll add strawberries.

DH made basil lemon pork chops on the grill. I don't like pork, normally, but this recipe is fantastic and could be done with chicken, too. It's similar to pesto but without the expensive pine nuts, no dairy, and lemon added. This is the recipe he used. I buy the hydroponic basil, much cheaper than the clamshell basil. I use LOTS of basil.

We had Angel Hair Pasta with Zucchini and Tomatoes, salad, and bread.
Tonight DD is bringing her boyfriend over so we're having salmon bowls with an asian salad and wontons on the side. |

Lemon pepper tilapia, rice, roasted broccoli, and a salad I'm making up (romaine, pickled beets, cucumbers, black olives, red onion, feta, sunflower seeds with a red wine vinegar vinaigrette). I ordered a make your own salad last weekend at the hospital where my fil was and that is the combo I came up with and it was really yummy.

marinated chicken breast in italien dressing and sauteed it. Roasted veggies. Homemade cheesy rice. Easy peasy and healthy. :heart

I was recently introduced to onion paratha and we are all crazy about it. We wrap it around some thin sliced beef but the paratha is the star. If I have any energy left that’s what I will make.

Pineapple soy ginger marinated grilled skirt steak, oven roasted potatoes, grilled veggie kebabs (red onion, yellow pepper, zucchini, mushrooms, and tomato from the garden), grilled corn on the cob, grilled pineapple. :yum
