I'm going to make a creamy gluten free penne pasta with zucchini, red bell pepper, mushrooms, and tomatoes (loosely based on this recipe) and a Greek salad on the side.

I think we're doing tacos, too. A taco bar is probably the easiest way to get veggies in my kids. :giggle

I use frozen Mahi Mahi from Costco and I replace the red pepper with tomatoes and double the spinach (literally to 18 oz.) but I don't increase the sauce at all and trust me, there is still PLENTY of sauce. It's a really yummy recipe (see reviews). My somewhat picky DD19 literally licked her plate last night...we were all cracking up. |

Tortilla soup adapted to make in the IP. My recipe calls for refried beans. I left them out of the cooking part & will add them once I release pressure. It's warm & sunny but the recipe was requested by dd who is not feeling well. I'll humor her. :)
