I'm going to make a creamy gluten free penne pasta with zucchini, red bell pepper, mushrooms, and tomatoes (loosely based on this recipe) and a Greek salad on the side.

I think we're doing tacos, too. A taco bar is probably the easiest way to get veggies in my kids. :giggle

Beef and broccoli over rice tonight. Last night was cheeseburgers, fries, and salad.

I use frozen Mahi Mahi from Costco and I replace the red pepper with tomatoes and double the spinach (literally to 18 oz.) but I don't increase the sauce at all and trust me, there is still PLENTY of sauce. It's a really yummy recipe (see reviews). My somewhat picky DD19 literally licked her plate last night...we were all cracking up.

That's pretty much the same sauce as that creamy Tuscan chicken with tomatoes and spinach. Only no cream cheese.

Tortilla soup adapted to make in the IP. My recipe calls for refried beans. I left them out of the cooking part & will add them once I release pressure. It's warm & sunny but the recipe was requested by dd who is not feeling well. I'll humor her. :)

Baked lemon pepper salmon topped with tzatziki, rice, asparagus, marinated Greek salad.
