My "tour de squash"
I was given nearly 50 yellow squash starts for my garden, and as a result, I have had an abundance of yellow squash for much of the summer. Here's what I have done with it so far:
- dehydrated into squash chips - dredged in flour, salt and herbs and fried - sauteed in oil with tomatoes, white beans, carmelized onion, garlic, bell pepper, etc. - Boiled with potatoes and cauliflower and mashed into "mashed potatoes" - Roasted with potatoes, carrots and bell pepper - Grilled on the grill - Julianned into a squash/carrot/radish salad - chopped into lettuce salad - shredded and in baked into muffins and pancakes - added to soup - added ti spaghetti sauce - peeled into strips for a pasta-like dish - given to family, friends, and neighbors :shifty (true story - a neighbor refused to take my gift of squash, saying "We can't eat those. My husband is diabetic." :hunh) I think the only thing I haven't done yet is stuffed them, and that's only because I haven't let them get that big. :shrug Anything else I've missed? |

I LOVE fresh garden squash, I would totally take some off your hands if I were close. I have some sitting on my counter form the farmers market, thanks for the ideas! |

I remembered another way we've eaten them - shredded and mixed into meatloaf.
My mom says I'm going to get squash poisoning... :shifty |
