Those darn pumpkin bars in the recipe section.
Pumpkin Enchiladas from Martha Stewart. we use black beans for the filling. I have done it like a casserole in the crockpot, as well. Pumpkin curry..I don't use rercipes much. Saute up your onion, garlic and spices inyour favorite fat (coconut oil:kiss) add chunks of pumpkin and whatever veg or beans you like. Cover with coconut milk. I love these Pumpkin Carob Chip Muffins, though I usually use raisins instead of carob chips.
I've got a delicious recipe that I adapted from the book Passionate Vegetarian, for Sweet Baked Pumpkin. Cut pumpkin into large pieces. Toss with melted vegan margarine, soy sauce, sweetener of choice (I like maple syrup), salt, pepper and paprika. You can add some orange juice too. Bake in a 200C/400F oven until tender. The original recipe has you cut the pumpkin so you have curved/hollow pieces. You add all the toppings to the curve/hollow and bake it, then mash the toppings in at the end once they're baked. Both ways are super, super tasty. I usually like to just toss it all together though, it's a little bit less fiddly. |

I'm actually eating Pumpkin Carob bread from that recipe literally RIGHT now, just ate the last bite and it's still all stuck to my teeth LOL

We've been making vegan GF scones twice a week! Only 1/4 cup maple syrup :)
