Vegan Butter Pecan 'Ice Cream' recipe
 

This is from another message board, I just tried it and it was unbelievably good!

2 frozen bananas
a generous dollop of honey
1/4 teaspoon vanilla extract
a pinch of salt

Toss it all in the food processor and process until smooth (add a tiny bit of warm water to help blend if needed.)

Then add the a small handful of pecans and pulse chop them so they're still chunky.

The bananas get cut into corn-size pieces first, then smaller pieces so they look gritty. But then it all clumps up into a ball and that's when it's ready. Mine was not very soft, more like hard soft-serv (or slightly softened hard-serv??) The food processer seems to work too quickly to thaw them much. I don't mind half-melted ice cream, but half-melted bananas aren't so appetizing. These were fine, pretty thick.

Yum! :yum I just froze some overripe bananas to use for muffins but this sounds better.

Not so much when it's frozen. I don't like mashed bananas, or bananas in my smoothies, but I did like this.

I tried this the other day. I iked it a lot, the consistency of it was surprising...I thought it would be mushy but it was perfect! I put a little too much honey in it though.

:lol OK, so maybe I put too much vanilla in it! :shrug It had a weird aftertaste. But other than that it was yummy! :yum

I hate to be a captain bringdown because the recipe sounds really good, but many vegans don't consider honey to be vegan, as it is an animal byproduct...
