November Meals
 
This might be a record starting a monthly thread on the 10th of the month. :doh So sorry about that.



What are you eating?



Tonight I am planning cheese enchiladas, mexican rice, and I might make stuffed jalapenos with the extra peppers I have before they go bad.

We have beautiful weather today so DH offered to grill. :)

I made Buddha bowls: quinoa, roasted chickpeas and sweet potatoes, sauteed kale and cabbage, and a peanut sauce.

Ok, Ive been a combo of slacking and just making the same things - ds has complained about too many repeats - and using up my pantry items to help my budget.

But I have a whole meal plan for this week that has more variety in it:
Falafals
Potato soup
fish or chicken (ill do both but ds doesnt eat much fish and dd doesnt eat chicken) with
Spicy indian rice dish
some type of pasta with a veggie side
Enchiladas
stir fry
something with lentils

I have been so slacking on meal planning. I need to get back in the groove. :blush

Tonight was sort of a fend for youself night. :blush I do have lots of great ingredients on hand so I don't feel too bad. :D

Monday - orange chicken
Tuesday - my birthday- fried shrimp, salid, cole slaw, rice pilaf and hopefully gingerbread.
Wendsday - walnut pomegranate stew
Thursday - chicken tortea soup
Friday - leftovers
Saturday - potatoes and bacon
Sunday - thanksgiving dinner at church - I need to take some sides and deserts that my family can eat
This is tentative
Monday - stakes and acorn squash

It's going to be a Crockpot/Instant Pot week for us. Tonight they're getting a Cook's Illustrated recipe for Slow cooker Chicken Tikka Masala that I've never tried. We'll see!

Last week I made an IP Minestrone from CI and it was just okay. Good, but not company-worthy. I only had soaked, not cooked beans on hand, so I gave it a shot, but I think I would have been happier just cooking the beans in the broth on the stove to start and adding the majority of the veggies halfway or more through. That and it had too much cabbage, not enough tomato for my taste.

Last night we had Air Fryer Cajun Shrimp & kielbasa over brown rice.

Tonight we had Blackened Mahi Mahi with Key Lime Tartar Sauce, Roasted Cauliflower Rice with Garlic and Lemon, and zoodles.

Tomorrow will be Air Fryer Chicken Sandwiches and a side salad.

DS just finished football and is trying to get on a healthier and lower carb eating path, which I guess will be good for us too.

It is basically copying a meal from a local restraint growing up. It was called On The River and it is set up high so you can see the river in Freeport. When I was little it was the big fancy place that we would only go to when family was in town.

Today I made turkey pumpkin chili and put it in the crock pot to be ready when people got home at different hours from their activities. It was very good.

That sounds good! Could you share the recipe?

We had a sheet pan dinner last night - roasted parsnips, carrots, and butternut squash with pork chops. I had three of them fighting over the last parsnip of all things!

I have a lot of practicing to do (I'm playing a Beethoven String quartet - on one rehearsal! - for a service on Sunday) so I'm hiding out with my instrument and giving everybody easy meals. Tonight I think they will get a Mississippi Pot Roast from the IP plus some easy veggie TBD. Probably green beans. I might not even cook them, as half of the beans usually get eaten by little sneaks while I'm prepping them anyway. :giggle I could just put them on the table in a bowl and see what happens!

The other day I made up a recipe where I put thinly sliced potatoes with the skin on layered in a casserole dish with salt and pepper and gf cream of mushroom soup and shredded parmesan cheese. Then I put thin chicken breasts on top and topped with more soup, salt and pepper, shredded mozzarella and shredded parmesan. It was surprisingly really good! I served it with kale caesar salad. ETA: Oops forgot that I also poured heavy cream over the potatoes so they'd be like scalloped potatoes.

Last night we had potsticker noodle bowls. Tonight I'm planning some kind of fish with parmesan risotto, sauteed green beans, and more kale salad. A bunch of kale at my store is 98 cents and I can usually get two meals out of it. That's some cheap health food!

Tonight is French dip style sandwiches. I made up the sauce. :shifty

Sear beef
Sauté onions, garlic, ginger in beef broth
Add coffee and balsamic vinegar. I usually add red wine but that felt too over the top tonight.
IP for 75 minutes. Natural release.
I’ll strain the juices and shred the meat. Serve on hoagie rolls or over mashed potatoes.

I am excited that in spite of the girls getting sick I kept to the meal plan.

It was also fun to beet my brother to making Fessnjan ( the walnut pomegranate stew) first. We always message when we are having it for the first time of the session and the past 3 years he has been me to it.

I love soup and good bread in cold weather. So far this month I've made white chicken chili (love all the soup recipes from Carlsbad Cravings), chicken vegetable, curried squash soup, and chicken and wild rice.

We make homemade pizza every Friday, usually, but only in cold weather because I preheat the pizza stones at 550 for 40 minutes. So we started that tradition again this month.


We've also had Ina Garten's Szechuan noodles this month. That's a huge favorite.

Last night we had loaded bk potatoes from the potatoes that were left after the potato soup and I have a lb of beef left that I had frozen from something else so did that. Then spicy beans, cheddar cheese and sour cream for options too. Side - roasted cauliflower.

The potatoes that I cooked but didnt get eaten Ill turn into mashed potatoes for the kids for snacks or sides to sandwiches.

Tonight is quesadillas.

Tuesday night is dh cooking and he is making. . .spaced the name for a second... island french toast. Its french toast with coconut, almonds and pineapple.

Sides TBD but we have lots of fresh and frozen fruit and veggies so not worried.
