put 2 packs of boneless skinless (non organic) chicken thighs in the fridge to defost for tommorow unsure on how I'm going to use it

I'd never even heard of chili fritos till I moved up here so don't even start with me :poke :giggle. It's one of those 'this is sheer evil but everyone loves it so I make it once every six months or so' dinners :lol.

Yesterday was chicken a la king.

Tonight is supposed to be beef stew but there a pizza fundraiser for Asher's school that I forgot about so I've got to make a decision.

cheesy spaghetti bake :yum :drool

box of spaghetti noodles, cooked, drained, mixed with a jar of sauce (and meat if you want). make a batch of white sauce, and add cheese (butter flour milk + 1/2 inch-ish of sliced amer cheeseand 1/4c grated parm). layer 1/2 spag in baking dish no smaller than 9x13 (10x15 is better), 1/2 cheese sauce, 1/2 spag, rest of sauce. bake @ 350 for 20-25min til heated through. enjoy - don't expect leftovers! :giggle

Not sure which is lunch and which is supper but today we're having:

Roasted red bell pepper chicken alfredo (jarred alfredo sauce (Newman's), big jar of roasted red bell peppers, leftover chicken, probably extra freshly grated parmesan) over Tinkyada brown rice pasta

Leftovers - chicken, cream spinach, sweet potatoes, and I'll probably roast the two bunches of asparagus in the fridge to go with it too:yum
