Grandma McClure's Corn Business
I made this tonight for dinner, it leans pretty heavily on convenience foods, since my G-ma made it up based on stuff she had in her cupboards one night :giggle
1/4 C butter or marg 1/4 C chopped green onions 3 eggs, beaten well 1 can of cream corn, undrained 1 can of whole kernel corn, also undrained 1 little can (3oz) Ortega chilis (you can leave these out if your LOs are not chile inclined, but it is a little boring then) 8oz corn muffin mix (the only one that comes in an 8oz box is Jiffy, which is NOT veg - I just use whatever is veg and estimate the amount - this recipe is not picky!) Mix all together, pour into greased 9x11 cake pan, and top with 3/4C shredded cheese (I have used Jack, cheddar, colby-jack, and pepper jack, all to good effect) Bake 30ish min. at 350ish (don't you love my recipes...so precise! Comes from years of living in houses with crap ovens and having to guesstimate! :giggle) Cheap! Easy! Children tend to eat it! Makes it a winner in this house! :rockon |
