Potato Soup
Made a good potato soup on accident the other night--was working creatively, so I don't have precise measurements for anything.
Big soup pot filled 1/2 with 1-inch cubed potatoes Water to cover potatoes 1 packet Golden G. Washington seasoning Healthy dump of dried Italian herbs (I'd say 2-3 Tbsps). Salt & Black pepper. Bring to full boil, reduce to simmer until potatoes are soft. (I had put too many potatoes in--2/3 of the pot--so I took a bunch out to make room for the next ingredients--turned those into some awesome mashed potatoes). Add in 1 can evaporated milk (NOT sweetened condensed milk) 16oz cottage cheese 1 lb frozen corn Garlic Powder Onion Powder (real onions would be better--probably 1/2 finely diced--but my last onion went bad). Several heaping Tbsps of cornstarch mixed in COLD water, then added to pot. Simmer to allow corn to cook and cottage cheese to "melt" and broth to thicken. |
