vegetarian sausage balls

This is my version of a LLL recipe. Not vegan - it has cheese - but I wanted to share this wonderful, lean recipe with you all:

8 oz Light Life Gimme Lean sausage (the kind in the plastic package that you slice into patties)
1 c. baking mix (see below)
5 oz grated reduced-fat sharp cheddar cheese
1 TB safflower oil (opt)

melt cheese in double boiler and add to sausage and baking mix in bowl. (I have not tried it, but my opinion is you could get away with not melting the cheese). I added some safflower oil to make it a better consistency. I used my hands to mix it. Form into 1" ballsand bake at 350 for 17 min.

Makes about 24 balls. We had these for dinner, but breakfast or snack or any meal would be great.

Baking mix:
4 c ww flour
3/4 c safflower oil
2 1/2 TB baking powder
1/2 TB salt
Mix with hands until blended, like "coarse meal." Store in glass jar in fridge.

My dc's LOVE "showsheg bows" and I have really felt bad giving them all that fat and no nutrients.

Tell me about the sausage you are talking about... Is it tofu based? Does it have the nice sausage-y herbs/spices in it?

Yes, it is really sausage-y in texture and spice. It is soy based, so I am not going to do it all the time; but ds loved them. And that baking mix that goes in them is great for biscuits (add 1/3 c buttermilk, milk/plain yogurt mix, or milk to 1 1/2 c. mix; bake 450 10 min), and other things. Ds likes to help mix it. :mrgreen
