Thai salad
 

Thought I'd share a salad idea from last night's dinner:

Tossed romaine and baby spinach
shredded carrot
sliced red bell pepper
blanched snow peas
shredded red cabbage
sauteed tofu (or tempeh cubes)
sesame seeds
sunflower seeds
goat cheese
peanut ginger salad dressing

the dressing I made with 1/4 cup peanut butter, 3 tbsp kejap manis (Indonesian sweet soy sauce), shredded fresh ginger, 3 crushed garlic cloves, 3 tbsp lime juice, 1 tbsp rice vinegar, and enough water to thin it out. I just heated the dressing in a saucepan to melt the pb and blend the ingredients,

It was yummy!
