Kombucha: What's your sugar to water ratio?
I've been experimenting with using less sugar, and I recently had a SCOBY mold!
I've been told so many different ratios and wonder what others are doing. Also, how long do you let it brew? |

I use one cup sugar to a gallon container (about 3 1/2 quarts fresh tea ) I let it sit 7-10 days for first ferment and a day or more for second ferment.
I am not comfortable fermenting longer since all my little people drink it and it does get higher in alcohol the longer the brew. |

Are you covering it with cloth that is breathable?
I do 1 cup sugar per gallon. :yes really sugar in it is just going to help it ferment faster and the more sugar the better and more carbonated it is. :think The Scooby eats the sugar, you're not consuming as much as you put in, right? |
