Using the last of the freezer meals I have on hand this week - Italian beef and Cranberry Orange Pork Roast. :jawdrop Going to the grocery store this afternoon so hopefully I can make up a few more.
I'm planning to freeze:
  • Italian beef - I truly can't get enough of that stuff. Delicious! - one bag
  • Chicken tacos - hopefully two bags
  • Sesame chicken - one bag
  • Grandma's BBQ meatballs - two bags
  • Purchase several bags of frozen veggies to have on hand for these meals - corn, mixed veggies, asian veggies, cauliflower mix

Do you brown the meat after it comes out of the crockpot? Also do you always make it into tacos or do you eat it some other way? I have this recipe pinned but haven't tried it yet.

I don't brown the meat. But I use pork mini roast and not butt/shoulder and it browns a little on its own. We almost never have tacos (DH has corn allergy and only 1 person likes tacos) but no rice and sometimes beans with it, or do a taco salad.

Ack, I'm out of freezer meals! :doh I need to back through this thread and make a plan for the new semester of ballet lessons. It starts in a little over a week!

I made Thai Basil and SW Chicken today. It would actually be more accurate to say I added the meat to the bags I had already prepped LOL!

I hired a lady to prep freezer meals for me a few months ago and two of the meals were delicious crockpot meals. Does anyone have a good Korean Beef or Jambalaya recipe? I wouldn't mind trying to replicate those.

eta: I just took a look at the recipe Jodi linked, but I need one that has more sauce. I can probably figure something out by combining the Asian Beef recipe ingredients with a Bourbon Chicken recipe that I use for proportions for the sauce.

I'm still looking for a Jambalaya recipe though. The meal I had kept the rice and shrimp in separate bags. The rice was added in the last half hour, and the cooked shrimp was added just before serving.

I haven't tried it, but maybe a recipe like this for the jambalaya? I've looked at this recipe several times for Korean BBQ Beef, but I can't make it because I have a child that is incredibly sensitive to pears.
