In that case, I offer you Spicy Chicken & Cornbread :rockon

3 chicken breasts, cooked and diced
5 oz frozen corn
1/2 C chicken broth
1/2 C sliced celery
1 medium onion, cut into thin slices
1/2 C salsa
4 t. cornstarch
1 pkg cornbread mix
1.5 C shredded cheddar cheese
1 8 oz can diced green chilis, drained

Combine chicken, corn, broth, celery and onion. Bring to a boil and reduce heat, simmering uncovered for 10 min. Add salsa. Stir 2 T water into cornstarch, and add to chicken mixture until bubbly. Prepare corn bread according to package directions. Pour chicken mix into baking dish, sprinkling with cheese and chilis. Spoon corn bread mix on top. Bake at 425 for 20 minutes.

This crockpot gem is called Souper Chicken.

2 lb. chicken parts
1 rib of celery, washed and roughly chopped
1/4 C flour
1 C milk
1 T fresh basil
1 clove garlic, minced
8 oz tomatoes
2 medium zucchini, cut lengthwise and then diagonally into 1/2 in pieces. Rinse chicken and pat dry. Heat milk, whisk into flour. Combine all ingredients in crock pot and stir thoroughly to coat chicken. Cover and cook on low for 6 hours.

Arrange chicken in a shallow casserole pouring other ingredients over chicken. Cover and bake until tender, about 45 minutes. Uncover and allow chicken to brown for the last 10 minutes. Baste occasionally during cooking. Sprinkle with chopped parsley before serving.
