Help with delicious food ideas! GF/DF
 
What kind of delicious foods would you recommend for someone who needs to go gluten free and dairy free (plus pork and caffeine free) for about six weeks. Big plus for yummy ways to eat cruciferous veggies (broccoli, cauliflower . . . :yum).

I know how to do this for my family, but we already eat pretty much Chinese style so it was easy.

Looking for comforting food ideas for a friend who has been used to eating a lot of fast food, or things like pizza, bean and cheese tacos. . .

Oven fried chicken (you can either dip in egg and GF Bisquick or a mix of Millet and Sorghum flours)

Sweet potato casserole use coconut milk and you can top it with (Oats, butter, brown sugar and or nuts)

Any veggie like steamed broccoli or spinach makes a really good meal.

If it is a 'sweet' taste that is ok, coconut milk pretty much cooks up in place of milk. I have had good luck with baking biscuits, cornbreads with soy milk or hemp with no difference in the texture.

You could do tacos with corn tortillas of if you can find them (although not cheap) GF Mission Hills Flour Tortillas.
Then make up taco and beans and have the typical sides (there are dairy free cheeses like Daiya and Daiya sour cream/yogurt)




I love chicken pot pie. For the gravy I do 3 Tbs of GF bisquick for quick, If I don't have it, I use tapioca flour and make a gravy with at least 2 cups of water or broth. I mix my cooked potato and carrots and celery with the chicken and top with GF biscuits and bake.


Beef roast with baked potato and carrots or a green.

Baked chickens are easy. (The beef roast or the chicken can be cooked in the slow cooker if you don't want to use your oven.)

Imo hands down the best way to eat cruciferous veggies is tossed with olive oil, salt and pepper and roasted. So easy and amazingly delicious.

Corn shells for tacos.

Gf pasta is fairly easy to access now and will enable your friend to still do the go to fave pasta dishes.

We do LOTS with rice and potatoes as the main base of meals. Cheap and easy.

The dayia gf macaroni and cheese really is pretty good. ( I haven't had real cheese in years but my dh who eats cheese eats.it with us)

My daughter would make this when she was here and it was pretty tasty. My personal favorite was the Alfredo box. (Publix sells it. Vitacost sometimes puts it on sale cheaper than local. I see it listed on Walmart.com, but it seems higher than the other 2 places.)

I have SO many good GFDF recipes! But not a ton of time. Are you on Pinterest? I wish the search function wasn't broken on GCM!

This looks really good! I make an AWESOME red lentil soup, but it has tomato paste and nightshades have started to bother me :(
