Well, my plan to eat menu said it was to be cinnamon thyme chicken but I bought pork chops the other day & forgot to throw them in the freezer so pork chops it is. There's awesome leftovers from last night a maybe some leftover veggie soup. The boys ate some leftovers a little bit ago while I was napping so I think I'll be lucky if they eat a chop among them.

oooh, I have been upping my game with regards to dinner prep. Trying a bunch of new recipes.

Tonight we had:

Pesto chicken bake: Chicken breast pounded thin, added a layer of pesto, covered in foil and baked. When it was almost done, I added sliced tomato and shredded gouda cheese and returned to the oven until the cheese was all melted. Absolutely spectacular.

Then I made slow cooker cream cheese chicken taquitos for the kids: http://lecremedelacrumb.com/2014/05/...-taquitos.html

Citrus Salad: a kale/spinach mix. Homemade orange vinaigrette dressing, sweet red peppers, orange and feta cheese. Also fantastic!

And roasted vegetables: asparagus, broccoli, cauliflower, carrots and garlic.

I just bought The New Artisan Bread in Five Minutes a Day & am excited to get baking once I get some more yeast....& some more time. I've used their master recipe which is free online & love the method. Yummy bread is great, warm fresh bread is awesome!

No dinner tonight. Last night we had latkes which is a new fave. Tomorrow will probably be Mac n cheese. Friday I'd like to do homemade ravioli.

We are really scraping the bottom of the barrel just now.

For tonight I found some Scotch beef burgers in the freezer so we'll have them with baby crash hot potatoes, mushrooms and carrots. A bit of a weird mixture but :shrug3
