need yummy, cold, simple to make summer type salads
 
to make for tomorrow. That are quick and easy. I work 11-3 and have family coming over at 4. It is too hot to have hot food. I want simple summer salad ideas. Something cold and simple for the kids too. I may just go get a cold cut tray or something. I wish I had time to make something, but I have had 6 kids here all day and two just left and we need to leave in 10 min. to go to our church home group meeting and by the time it ends we won't want to go to the store so I will probably have to do that in the morning before I go to work and make a cake for my sister too. :phew

I like to do pasta, then cut up some vegs (cucumbers, tomatoes, onion, broccoli if you like, etc). Maybe add some corn. Then dress with Italian salad dressing. You can also add chicken if you like (buy a premade rotisserie or make one in the crockpot).

And watermelon with feta cheese is seriously yummy.

My mom makes that big layered salad with the mayo dressing on top.

I like to use quinoa for salads now. You can make a greek salad (tomatoes, cucumber, bell peppers, feta, and greek salad dressing, purchased or homemade) and then add quinoa to it. Works fine if you add lettuce as well, for some more green stuff in there.

I've also done a quinoa salad with dried apricots and almonds in it. :yum The kids BEGGED for leftovers the next day, which should tell you they like it, at least. ;)
