Not the OP, but when I used to make crustless quiche I just did it in a well-greased 8x8 glass pan. :shrug Super yummy, but I don't make it anymore since it's just not that good without cheese. :no

Wild rice pilaf and shrimp/prawns stirfried in some kind of seasoning, haven't decided what yet.

Vegetables of some type on the side.

DH and I made crustless quiche a couple of days ago. We just made it in a 9-inch glass pie pan (deeper than normal.) We buttered the dish first. Worked fine.

We had quinoa "burgers" and salad. My kids were not convinced of the deliciousness of their dinner though. :sigh I'll try again another day. In the meantime, more for me!

(We are not a vegetarian family...but I try to do meatless once or twice a week.)

Make your own pizzas. My kids were thrilled to make their own and get to choose just the right toppings.

I was thrilled to eat real pizza. :shifty

(We have NO food in the house because I'm going shopping tomorrow)

Baked ziti and an Italian-style frittata with bell pepper, onion, garlic and oregano. DD1 ate a bowl of frozen blueberries as well:shrug3

Like someone said below, I just butter ( actually used olive oil) the inside of a deep dish 9 in pie pan and put all ingredients in there minus a crust.
