Spaghetti and meatballs
Ds1 wants spaghetti and meatballs for dinner for his bday. :heart I don't make meatballs as a general rule, so I pulled out my mom's recipe and made them. :shrug3 What I don't know is when do I put the meatballs in the sauce? :scratch:doh I cooked them in my pan and drained the grease....the sauce is still cooking. I threw a bit of browned meat in for flavor. I'm afraid if I put them in now they'll get all broken apart from stirring the sauce or overdone since the sauce is still simmering. So, when do YOU put the meatballs in?

I like the meatballs added right before serving but you can simmer then in the sauce before that, like while you are making the pasta. That makes them softer and more tender which may be easier for child. I like when they are still nicely browned from cooking and retain that texture though.

I've also served them on top after everything was plated. I like them either way. :shrug

I like to bake them in the oven and then put on pasta and sauce over that because IME is less work then ftying and then if you add to sauce they come apart.Exception is frozen meatballs from Sams which pur in crockpot - dont seem to come apart

One tip I love from Rachael Ray is to cook meatballs on a cooling rack over cookie sheet. That way they get browned all over and grease drips away. I usually bake until decently browned then throw in sauce for flavor. I don't have issue with break up because of full browning (as opposed to on side and half falls off :giggle)
