Veggie Reuben

My husband loves Reubens. I was thinking you could use slice seitan, too.

MMMMMM.... sounds good. :yum I made a veggie rueben with zucchini as a meat substitute and it was yummy!!!

I also have a recipe with tempeh, which is quite good:

Chop a block of tempeh in half (will make 2 sandwiches). Simmer it in 1/2C water and 2T soy sauce until liquid is absorbed - about 15-20 minutes. Flip tempeh at least once so that each side gets seasoned. Pan-fry tempeh in 2T sesame oil until crispy.

Add sauerkraut, dressing, cheese (if using), etc.

Does anyone else have Great Harvest Bread Co. stores where you live? Their bread is AMAZING. They grind their wheat in the store daily. Anyhoo, they make a pumpernickel/rye bread that is really great.
