No idea? I made a bunch of desserts today. Cinnamon rolls and white chocolate strawberry pie. Might do Taco Time. :shifty

Whole Foods had baby back ribs marked down from $9.99 a lb to $3.99. Sounded like a good price? I've never made ribs before. I made a sauce from canned pears and no-sugar homemade ketchup. Then I added 2 T honey in the whole batch. My boys said they were too sweet :doh We never eat BBQ or anything like it. They weren't sweet to my tastes! Served with leftover rice and corn on the cob. I wanted to make cole slaw, but I ran out of steam.

I ended up buying some vagged Caesar salad mix and adding canned chicken. :shrug

We had some leftover pork loin from last night, so I shredded it, added BBQ sauce, and served it on buns.

Last night's plans got nixed after the stove went out as I turned on the second burner :doh So we had fish on the indoor grill + broccoli and cauliflower.

I am making a turkey today. Not too fancy - I have half a box of GF stuffing leftover probably from Christmas :shifty I'll bake some sweet potatoes and russets, and steam some broccoli.

I want to make taco soup, but I don't have a recipe. I'll google, but does anyone have a tried and true favorite?

This is a recipe I made up using leftovers, but I think you could just go ahead and season each layer. For the ground beef, I just used taco seasoning; for the black beans, they are flavored with salt, pepper, granulated garlic, granulated onion, cumin, chili powder, juice of three small limes, and a handful of chopped cilantro.

Cilantro and lime beef taco soup

Dd and I made up a soup tonight with leftovers. It's a taco-type soup. We had seasoned taco meat and cilantro and lime black beans in the freezer and to that we added chicken broth, tomatoes and peppers (Rotel), corn, more lime and seasoned it with salt, pepper, garlic, onion, chili powder and cumin. We topped it with cheddar cheese and tortilla chips. It was incredibly yummy. We definitely will make it again!

Dh is making omelettes for dinner. :yum

I make a tortilla soup that is easy & yummy:

Tortilla Soup

1 can refried beans
1 can black beans, rinsed and drained
1 can chicken broth
1.5 cups frozen corn
¾ c chunky salsa
¾ c cubed cooked chicken
½ c water

Combine in a saucepan and bring to a boil. Reduce heat and let simmer for 10 minutes.

Add 1 cup shredded cheddar cheese and stir until melted.

Serve over crushed tortillas and additional shredded cheese.

I make a super yummy thick taco/black bean soup that has ground beef and cheese. I can post the recipe for it if anyone wants :-)
