need recipe please
Hi, I'm cooking for a family of 6. (kids range in age from 4-13.) Mama just had surgery, and here are the dietary restrictions:
Vegetarian (eggs are ok), no dairy or gluten. They also limit soy. Now, you'd think I would be able to handle that just fine, and I can! (I can cook for anyone!) BUT, we are the very opposite of vegetarian! LOL! At our house, we eat Keto and/or Paleo, with no nuts plus other food restrictions. So meat is eaten at every meal! So I'd love some good ideas please! I'll probably cook for her about once a week for the next 6-8 weeks. Thanks!! |

I don''t know what you would substitute for the 'main' dish, but roasted veggies are great. (instead of butter, use olive oil to coat the veggies.) If eggs are ok with the mom, for an easy dessert in a prepared pie plate you could pour a mixture of 3 or 4 eggs, 2 cups of coconut milk with about 1/2 cup of GF bisquick and sugar (1/3 cup to 1/2 cup) It makes a crust of it's own (well light crust that is fine in slices) It could be plain, topped with coconut whipped cream or do a meringue type topping. Bake at 350 until the center is done. (about an hour) |

Tacos! There is a great lentil vegan crockpot taco recipe.
Chili and cornbread (assuming they do corn) Baked potato and salad bar Make your own pizza with gf dough? Also ask what their faves are. |

Chinese stir fried veggies over the rice angel hair noodles?
Spaghetti with lots of mushrooms, onions and tomato in the sauce. If you have GF corn meal or sorghum flour you could make a good cornbread to go with the meal you choose. |

This is the way we eat when all my kids are here for dinner! The vegetarian part is relatively new since my 19 yo decided to try it. I'm going to use some of these ideas for myself. :)
I've found that I can take some of my favorite recipes and leave out the meat, adding extra veggies for bulk and flavor and sometimes lentils or chick peas for protein. (Roasted chick peas on top of a salad instead of chicken, yum!). Dhal, veggie curry and rice.
Lentil sloppy joes on gf buns. Refried beans and other fixings they can eat with tacos/tortilla chips/corn tortillas/taco salad. Casseroles that use coconut milk for a creamy sauce. Do they enjoy a bit of junk food? Haribo candies and some potato chips might meet their requirements. Popcorn? Depending on how many eggs they can tolerate, black bean brownies or tapioca pudding made with coconut milk could work. |

I would think it would work fairly well with any custard type pie recipe. |

Instead of all those crazy flours, you can use 2 cups of any GF soy-free baking mix that has xanthan gum in it PLUS a GF baking powder. Gluten-free Dairy-free Biscuits Ingredients: 2 cups baking mix 1/3 cup + 1 tablespoon oil combo (I used about 1/4 cup coconut oil, and the rest olive oil) 2 ½ teaspoons gluten-free baking powder 1 egg 1 teaspoon salt 2/3 cup liquid (I used coconut milk beverage but water will work) |
