Meals in May
 

Today was pizza from the freezer and salad with lettuce from my little garden. It is so satisfying and amazing to eat food that grew from seeds I planted!

MIL fed us today for late Easter…since we had 18” of snow that week. :giggle

It's too early to plant here. Snow expected tomorrow. Ha!

What an awesome thing your garden is!

I had salad and a smoothie, and I fed my Dad chicken noodle soup that I made for him the other day.

Today: who knows :shrug Every week, every day people need to eat around here. Its nonsense. :shifty :giggle

Anyway, it was an especially busy weekend so I didn't meal plan. Again.

We had lentil taco salads last night

Not sure about today since there's plenty leftover but I had planned a sausage, potato, cabbage dish.

Last night was pancakes and sausage.

Tonight is up in the air. I’m trying to pantry shop until Thursday, payday.

We had fried rice with leftover pork DH smoked yesterday.

Salmon burgers for the kids. Mod for dh and I.

I am so over cooking on Mondays. I’m feeling down so Mod it is. Easy comfort food.

Tonight I made pho. I thought it was really excellent but everyone was tired and grumpy at dinner so I don't think anyone appreciated it.

I love pho. I’ve never tried to make it though. :think

I need a plan for tonight. Co-op was cancelled due to covid so class is online. Sigh. But, I’ll be home and able to make dinner. Maybe tacos.

Now mine isn't ever as good as what I have at out but it is still good and even passable ( I have had similar at restraints)

Last night, I ended up doing migas and Kodiak cakes because we were out of sausage.

I'll probably do a sheet pan chicken thing tonight. I need to thaw out a pork roast for pulled pork later this week

I love pho! We buy a side of beef every year and I save the oxtail and the small tenderloin for pho. So yummy!

We're having schnitzel tonight. I think. I have a pork loin. Littlest asked for pork chops, too. Either one is possible. Steamed broccoli on the side.

My mom asked to bring over pizza at the last minute. Yes, please!

Got supplies for Chicken Tortilla Soup. Will do that for lunch time tomorrow!
