Your favorite muffin recipes, please! And, adding protein powder?

I'm on a mission to fill my freezer with muffins because my kids are tired of their self-serve breakfast choices. And I don't like making breakfast more than once a week.

What are your favorites? I'm looking for healthier choices but they don't have to be completely sugar free or anything. But I'm not looking for cupcakes that call themselves muffins. :lol

I just made these double chocolate zucchini muffins. They are fantastic. They only have 1/2 cup of sugar and 1/4 cup of avocado oil per 12 muffins . And there's the zucchini in there. They're still not super healthy but I'm going for middle of the road, here. (Pics of the muffins on my Instagram, link in siggy.)

Has anyone successfully added a little protein powder to muffin batter?

We've liked this recipe a lot recently. I leave out the nuts and raisins for our personal tastes. It makes a lot of batter too - when I double it I end up with 24 muffins plus a couple of mini loaves.

I have not tried adding protein powder to baking recipes. I have made a few recipes that use Greek yogurt. The recipe I posted could probably do well with Greek yogurt in place of some of the applesauce.

I like the Trim Healthy Mama muffins.

That's how to make their baking blend.

I'll see if some muffin recipes are on the web.

You can find Danielle Walker's hidden veggie muffin recipe on the web. It's great.

I make muffins and keep them in my fridge for breakfasts for my kids. Here are some of my favorites that are all pretty healthy:

We are GF, so not sure you want any of my recipes :giggle But I add up to 1/2 cup protein powder to every single baked good we make (breakfast baked goods). I use brown rice or pea protein, unsweetened.

Do you reduce flour by the same amount or do you just add it without changing anything?

My favorite discovery was basic muffin recipe in The Tightwad Gazette and The Joy of Cooking. This much dry + this much wet + up to this much wet fruit or veggies, or up to this many dry mix-ins. There were even a couple variations on the basic mix, like one with whipped egg whites to hold heavy additions such as whole berries. It's a little hit or miss compared to tried-and-true recipes, but great for confidence using up whatever is on hand.

Deceptively Delicious and the other similar book both had muffin/pancake chapters with recipes packing fruit, veggies, and/or beans into baked goods.

I reduce flour by exactly the same amount.

A muffin that is high protein already:

1 cup nut butter
2 eggs
1/4 cup sweetener
1 T vinegar
1/2 t baking soda

It stands alone like that. But then I add:
1 cup water
2 T each hemp seeds, chia seeds, ground flax
1/4 each oat bran, mini chocolate chips, and protein powder
2/3 cup quick oats

These freeze better than any other muffin.

I have another recipe that is bananas, almond butter, coconut flour, and maple syrup basically. I can look that one up if it interests you.

We made these the other day. They were definitely not sweet. Ds liked them. Dh didn't, but I think he likes them to be much sweeter. I'd probably add a little more honey next time.

I was just coming here to say this exact thing. I never use a recipe for muffins. My most basic formula, fwiw, is: 2 c flour (I typically use 1 cup ap flour and 1 cup some other grain - if you want all whole grain you need to make some other adjustments), 1 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt, 1-2 tsp spices if desired, 1/4-1/2 c sugar, 1 egg, 1 c liquids (either some sort of wet mashed fruit/veg or some sort of milk or a mix), 1/4 c oil, 1/2 - 1 c mix ins. You can sub up to 1/2 c nut butter for oil.

I don't know if this is too much like a cupcake masquerading as a muffin, but...

Those are my favorite. We double it and use full sized muffin pans.
The chocolate ones are really good, too. I spread them with peanut butter. It is more dessert, though.
I have never put protein powder in.
