I need some vegetarian PASTA DISH recipes, please~
 
Would you please share your favorites? I have an overflow of pastas that need to be eaten before they go bad. All different sorts, long noodles, spirals, shapes, etc.

Oh! And I have tofu and tempeh in my fridge and a little bit of seitan. :)

I have a really easy "alfredo" sauce that mamaKristin gave me recently...

1 8 oz. package of cream cheese, cubed
1 c. milk
1 c. parmesan (I used a shredded parm/Romano mix)

Melt the cream cheese in a small saucepan, I added the milk with it. When it's melted then add in the parm and stir until creamy. I added some garlic salt (would have done sauteed minced garlic if I had more time) and pepper, to taste, and then topped with more parm. I put it over mini penne but you could use anything.

Do you like marinara or red sauce? Saute chopped garlic and onion in a little olive oil, add drained mushrooms, diced canned tomatoes (a bunch...I use fresh from the garden during the summer months) and whatever other veggies that sound good - I've done zucchini and summer squash, diced up carrots, celery, etc. Stir in some pepper, salt, Italian seasoning, bay leaf, whatever else sounds good (I put in basil and thyme when it's in season). Stir together and simmer for a long time (I do 2 hrs). :yum

WOW that red sauce sounds amazing! I will do that! I have carrots and celerey that need ot be eaten! ANd I can easily pick up a squash too, to add to it. Thank you!!

The white sauce sounds so ridicuously easy, that I cannot believe I payed $2.50 for a jar of shwag tonight for our alfredo, when I have ALL of those ingredients that you listed here. :doh :lol

we love garlic alfredo...but i buy the premade jars :hiding
also love to do a bit of evoo, garlic, onion, and a veggie mix (whatever ive got around that would work w/ it) and lotsa parm cheese

See, the idea of veggies without a sauce on my pasta sounds foreign to me. Though, admittedly I might just like it! I'm used to drowning things in a sauce though. :giggle

the seasoned evoo works kinda like a sauce, just not so thick ;) i guess its like a warm pasta salad though :lol

Oh, I know! That's why I made it, b/c I had everything on hand. It was yum, too - everyone had seconds and then dh discovered it the next day (he wasn't there for dinner) and was like, wow, this is good! Soooo easy, too. :)

We have just made meatless spaghetti and put extra mushrooms in it. Or we do pasta salad which is really good especially right know with everyone bbqing. MMMMM ok I am getting hungry.


Wish I could have the alfredo stuff though but I cant have cheese. :sadno

Just wanted to add that if it's dried pasta you have, it freezes really nicely to extend it's life.

yes yes yes! We try to go more vegan than vegetarian. Though I'm not vegan, I prefer less dairy, the better.

Easy Tofu Sauce

Saute in olive oil crushed garlic, tomato paste, basil (fresh or dried), oregano, salt, black pepper, and crushed red pepper. Add a big can of crushed tomatoes (I use the kind with basil) and a little water. When bubbling add a pound of smashed extra firm tofu and chopped fresh (or dried) parsley. Cook until thick and hot. You can also add vegan parmesan.


Vegan Baked Ziti

Cook Ziti to al dente. Make above sauce but omit tofu and parsley. For the vegan ricotta combine the following, keeping in mind you want a really creamy texture:

I pound smashed extra firm tofu
Tofu sour cream (I use Tofutti brand, a couple of big heaping spoonfuls)
Chopped fresh parsley (or dried)
Vegan parmesan
Breadcrumbs (can be Italian seasoned)
Lemon-pepper blend seasoning (just a few shakes)
Dried basil
Oregano
Crushed red pepper
Ground rosemary (just a pinch)
Crushed garlic or garlic powder
Salt and pepper

Pre-heat oven to 350. In a big bowl combine cooked pasta, a couple of ladles of the sauce, and the ricotta. In a baking pan, ladle a bit of sauce on the bottom, then pour in pasta/tofu mixture. Pour a bit more sauce on top. Sprinkle with Vegan parmesan and bake covered until hot.

I have tons more recipes (a lot that are not sauce based) at home (I'm at work now) but these two I made up and know. I'm Italian, and anything with sauce I was born knowing how to make...

Can dry pasta go bad? I never worry about it's age.

I love pasta salad. It's such a great snack. I have little thermoses so I can take it with me.
