Oh yay! It's finally May!!!!! Though you wouldn't know it weather wise here in Michigan.... :-/

I have ground beef in the fridge. I'm thinking I'll make tacos with it. And roasted veggies.

Last night we had ground beef stroganoff over rice.

Dinner out, my parents are visiting this weekend and taking us out to dinner tonight. My daughter gets to pick and she chose Hibachi Grill. :dance

I'm such a goof, I love hibachi grill with all the silly jokes and fun stuff.

Also, dh and I's first date was at a Hibachi Grill AND where he asked me to marry him a year later.

I haven't even made a menu for this week yet. Leftovers today so that will be easy. Or maybe I should make something today and push leftovers for the days we have practice.

Let's see. . . what should I make - stir fry I think for today.

Okay I came here to get ideas so figured I’d share what I came up with for the week lol.
Spaghetti
Loaded sweet potato (bacon, cheese, sour cream, chives)
Chicken wild rice soup
Meatloaf mashed potatoes
Grilled cheese

Our chickens are laying in full force so I'm making quiche tonight. I think with kale and caramelized onions.

Tomorrow will probably be French toast.

Spinach chicken casserole with cream cheese, sun-dried tomatoes and mozzarella, rice, asparagus. I can link the chicken recipe later if someone is interested. Pinterest seems to be down for me at the moment. I'm so happy I found this recipe because it will use up some of the ingredients that I bought for a different recipe last week. I'm trying so very hard not to waste a bunch of food.

The plan for tonight is potatoes and bacon.

Wendsday is chicken on salids ( I am unreasnobly excited about this because I have been thinking about what I like aboutsalids that I get at reatrantas and have candied picans and blueberries to go in these.

Pasta for the night I will at knitting group.

Friday wiggle worm wants to make corn dog muffins from her magazine.

Thanks! I've been trying to get more fresh veggies in us lately. It's always my goal every spring! I'm so motivated by the produce!

I love this time of year and all of the wonderful produce. Your picture makes me want a sweet potato and they actually are not my favorite things in the world.:shifty I'm going to have to put them on the menu for next week. I love pairing sweet potatoes with deep dark greens like spinach like you did. They seem to go together for some reason.

Yesterday was vegetable fried rice.
Today might be either fast food or else just whatever is available and quick since ds has practice and dd a game and there is zero overlap on those and dh is working late due to a big project he is behind on.

Last night we had chicken fajita bowls. The recipe was for shrimp but I subbed chicken. I don't normally love bell peppers, but I made them anyway to get more veggies in and I actually really like them roasted like that!

I just sent myself the recipe. I will plan to make it with both shrimp and chicken and you can add which one you want since dd doesn't eat chicken (vegetarian) and son doesn't love shrimp but loves chicken.

Oh that looks really good. I think I will put it on the menu next week.

I hate bell peppers and always substitute pablano pepper that I enjoy.
