how do you cook beans to make them more digestable?
 
Our family is vegan and we eat alot of beans.My boys especially have alot of gas so Im wondering if there my be something I could do differently so the gas problems cease :sick

Add some crystallized ginger (like 1 tsp) to the pot when soaking and cooking. It does nothing for flavor but helps the "fluffy tummy". I just buy a big container of it and keep it in my fridge (it lasts a REALLY long time) and cut up one piece for each pot of beans.

We soak/sprout them with some whey. Then I cook them in a crock pot slow and low.

I do them in BIG batches, then freeze them in meal size portions.

Adding onion and garlic helps, too. There's also an herb. . . um. . . .epazote, I think, which helps. I've heard that Bean-o helps a lot, too.

I just found out that Beano is not veggie.They make it from fish :hunh I ussually cook beans in the crockpot but it is still horrible!

One of my bean cookbooks says to boil the beans hard for 3 minutes, and drain and rinse, add fresh water and then cook. They say that helps a lot with gas. And I think there's a "Bean-o" type product that is veggie. Have you ever tried canned beans? They they still give a lot of gas? There are other foods you can pair beans up with that will help, too. I'll try and track down that book. . . . . . . .

Do you cook in the soaking water or dump it?

I am pretty sure you need to dump it.

For us...the sprouting is what makes all the difference.

Canned beans still cause gas for us.Does anyone know the name of the beano type product that is veggie?

Thanks for the product name :) Is sprouting different from soaking?I dont even normally soak just cook in the crock on low.

I precook most of my beans in the crock pot and then use in recipies as needed. I soak beans over night then empty that and add new water to cook changing the water cuts back on gas a ton. I alos often cook with garlic onions or ginger (not necessarly all). Which alos helps.

Adding whey helps *a lot*. Looooong, slow cooking helps to break down those simple carbs. that are undigestible. What happens when something moves through into the large intestine undigested (most digestion occurs in the small intestine), bacteria (rather than digestive enzymes) go to work on it, causing the gas. So, breaking down those simple carbs. or "pre-digesting" them is what makes sure that the digestion takes place where it needs to take place.

Sprouting also breaks down those particular sugars (simple carbs.).

Sprouting is taking soaking much farther. Soaking begins to break things down but sprouting takes several days and changes the enzyme action in the whole bean.

So,are you soaking for a longer time and thats sprouting?Could you tell me step by step what to do to sprout the beans?
