Chow Chow
Cabbage was on sale after New Years here. I didn't know what to do with as much as I bought, so I thought about chow chow (cabbage relish). No green tomatoes right now, so I substituted a tart variety of apple for the chopped green tomatoes. It turned out pretty good if I do say so myself. Four beautiful pint jars are sitting on my shelves and I think I'll grab some more apples this Friday and put up a few more this weekend.

Sounds good! I love the green tomatoe variety and we go through quite a bit of it in the winter time with all the hearty and warm dishes that I prepare. Is it vinegar and mustard based? :)

Vinegar, sugar, and a pickling spice mix that includes mustard (but not a lot -- I'm not a huge mustard fan). I was surprised the apples worked as well they did.

Apples with cabbage are a classic combo...that's why I know it's yummy. :D
