Yesterday and today we had chicken enchilada soup. It was super yummy. Of course I had to make changes. I added one cup uncooked basmati rice and some sliced mini bell peppers.

Burgers with homemade gluten free buns (not delicious, before anyone asks for a recipe :lol I'll have to try another...but I have a great bun pan!), hot crash potatoes with cheese, and green salad.

Greek spaghetti tonight. It was really good! I used heirloom tomatoes from the garden and added chicken.

Last night my dd14 make homemade gluten free pizza for dinner. Tonight we had pot roast, rice and gravy, steamed green beans and roasted carrots, beets, onion and garlic.

It was pretty good! A different flavor than Panera's, but still very good :)

Not a dinner but I just made pioneer woman's chicken tortilla soup (with a couple of tweaks) and it was yummy! Kind of involved prepwise for a soup though

If you find one you love please share! Tho I do not have a bun pan... Is that required? Right now I've been buying and freezing them when I can find them on manager markdown but they're still $$$.

The GF breads from America's Test Kitchen (How Can it be Gluten Free? vol 1 and 2) are the closest to regular glutenous breads that we've tried. I loaned my cookbook to a friend, so I can't look it up right now, but I've seen both books at my library.

Tonight was our weekly Build Your Own Nachos night. Last night we were supposed to have homemade pizza, but I changed it up at the last minute and made meatball subs. (I didn't have oregano. I didn't feel like pizza sauce without oregano, so I made a straight marinara. Crazy, right??!)

I just made sausages tonight because I've had one heck of a day and then my original dinner plans fell through. Still, no one complained!

This turned out quite good. I used sweet potatoes instead of white. My good veggie eater said the veggies were "too spicy" so I will probably leave some plain next time.
