Wonderful, wonderful soba noodle salad.
I love this recipe. I got it off of a TV show called Get Fresh with Sara Snow.
The original recipe is: soba noodle salad (cooked and drained, cooled)--these noodles cook super fast..like 6 minutes! bell peppers--I use red and orange usually. mung bean sprouts green onion optional: to top the salad, soak some arame and then squeeze water out. then marinate the arame in a couple teaspoons of Bragg's Liquid Aminos or soy sauce. Dressing: sesame oil dijon mustard maple syrup I don't have exact measurements, but you use the most of sesame oil. mix it all together so it's creamy looking. if you use too much mustard, you'll know it. Just add more oil and syrup to balance it out. I make this every week and it's always a quick lunch or dinner for me. dd loves it too! I don't usually stick to the original recipe. I usually add some kale, swiss chard, bok choy, or cabbage (whatever is in my CSA box that week) and add really any other veggies (the more colors, the better!). It's always amazing and I never get tired of this salad. And it's mostly raw! :yes This recipe is super quick if you keep it original or have veggies chopped ahead of time. |
