I made this: Warm butternut squash and chickpea salad So good. But, because I don't follow recipes well :shifty I threw the chickpeas in to roast with the squash a bit. The more roasty chickpeas made up for the slightly squishy squash - fresh squash would be better, texture-wise. I used parsley, because DH bought it instead of cilantro. However, my kids don't like cilantro, and they all inhaled this salad.

I just posted this in December's dinners too, but it made me think of this thread.

Tonight I made Pumpkin Mac n Cheese with Roasted Veggies. I was skeptical but the reviews were great, so I wanted to try it (because I always want more veggies in our diet!). It was really good! Even my kiddos liked it and DH especially did, and that says a lot since there was no meat in it! DS was at church so he didn't get to try it....he would have been the true test as my pickiest child.

I’ve seen shredded Brussels sprouts salads on Pinterest that looked good.
